Does the chance increase of getting a new trade when I trade the last trade more often with a villager?

Yes. In fact, trading the last trade is the only way to make a villager generate a new trade. From the Minecraft Wiki:

They can generate new offers when the last offer available (rightmost on their list of offers) has been traded at least once.

Each time you trade the last trade and close the trading screen, there is a chance that a new trade will be generated. Therefore, trading the last trade repeatedly will trigger the chance of a new trade repeatedly, and all those chances in combination effectively increases your odds of a new trade appearing over time.

To be more specific, the chance to get a new trade appears when you trade the last offer. It does not increase any more if you keep trading. Simple: trade the last offer once -> leave trade screen -> observe particles -> check if a new offer generated -> repeat. – Orc JMR Sep 15 '13 at 17:23
@OrcJMR I interpreted "more often" in the OP to already mean rinsing and repeating as you describe, since there is a limit to how much you can trade and I'm pretty sure the OP isn't asking about trading forever without ever closing the GUI since that's not currently possible. ;) But yes, the extra clarity is good! – SevenSidedDie Sep 15 '13 at 18:22
