I'm looking for what would be the best craft skill to get into with my class : Engineer. But while were at it, is there a list of what would be best to have with each class in Guild Wars 2?

I would use jewelry/leatherworker for your engineer. Problem with huntsman/leatherworker is that both use the same rare materials, so it'll be a slow way up. Also, engineers can't switch weapons, so the benefit of making your own weapons is diminished, while jewelry will serve you well forever, and uses different resources than leatherworker.

Since you are crafting to make items usable by your profession here are the skills that can create usable items for your profession.

Weaponsmith — Shields.
Huntsman — Harpoon guns, pistols, rifles.
Leatherworker — Medium armor.
Jeweler — Jewelry.
Chef — Food.

I am not sure there are a 'best' 2 to pick, but Huntsman to create weapons and Leatherworker to create armor wouldn't be bad.
