Around the time you run into them you can have Agility 1 and the Stealth boots which basically allows you to sprint up to them, jump to their height and perform an assassination without being heard. There's no need to jump on any objects first if you are on the same ground as them: Agility 1 allows you to jump right up to them.

I reckon the tallboy body (not including its frame/stilts/wreckage) will be treated like a normal body, and could be found if not hidden properly.

Yes, if an unconscious body falls into water, it counts as a death, and the blood is on your hands.
If you go back down to collect the body, you should see the dead symbol rather than the sleep symbol. If you're on the bridge level or one of the other places where this is impractical, you may want to reload from a previous save just to be safe.

I believe all killing methods result in increased chaos. Since there are apparently non-lethal methods for disposing of your main targets, this might include them. First of all, if you pick up all the runes, you should be able to grab Blink II, Agility I and Possession I by the end of the first mission. There are multiple ways to play Dishonored, if you are playing by killing and still remaining hidden shadow kill is a useful skill as you don't have to take care of the bodies which can tip off enemies.
As to your second question, a body being found also produces chaos in addition to that of killing.

You can use darkness to hide, actually, but it works only when enemies are far from you. Don't do anything too loud, and you can snipe them out easily. Shoot with a gun and they'll be alerted and run toward the noise.

I did two playthroughs: mostly stealth (less than 20 kills), then mostly murder (less than 10 survivors. I was thorough). I did not find the quantity of rats, guards, or guard security mechanisms to be substantially different between the two playthroughs.

It's rather easy; hold down the throw button (default right-mouse on PC) before throwing it. Dishonored provides you a neat little UI indicator telling you how long you have until it blows. Hold it as long as you need, then throw. Do make sure to leave enough time for the grenade to get where it's going.

It depends if a detection meter is shown above a Survivor's head upon them detecting your presence.

If there's no garbage bins around, try putting the bodies out of reach of rats that might spawn - small tables are probably best so that the rats would be unlikely to spawn on the small surface area of the table. If you're trying not to kill many people at all, rats will be quite rare anyway.

Unconscious bodies are vulnerable to being eaten by rats. You can store them in garbage bins to make them completely safe. The same holds true of corpses. There is also an ability that turns corpses you kill (level 1: stealth kills only, level 2, both) to ash, making it a non issue.
