+1 for the minimize / maximize, this usually works. Anyway, it's more about preventing apps from stealing the focus from other ones than stopping the games going into windowed mode: it's not really the games fault. You'll have to configure your other applications not to steal the focus like that. Avast has a silent mode, for instance. I don't know about the Apple software update, but Windows Update never bugged me like that (I have set "check for update but let me choose whether to download and install them").

You got me worried about the voice audio coming only through the pad. Actually I have just read (see google.com/url?q=http://forums.xbox.com/thread/…) that the settings allow voice to also go through the AV output. I don't know about the "hearing game sound from the gamepad audio output" thing, though, you may be right.

lol...you are right fbueckert and turbo, the Xbox 360 wiki page doesn't mention anything about jack inputs actually. That leaves me only the plug on pad option, then. Thank you all !

Well, I don't know, I thought the standard MS headset (provided with the console) comes with a 2.5mm mini-jack IO plug ?

Ah yes, I forgot about that option. I think I would still prefer if the microphone is plugged to the console, though (can't break the mini-jack due a bad move or something like that)
