Yes, thieves are tricksy. However, in my experience they usually sneak through the traps, head for the children/swag, get seen, and flee directly into the cage traps again, getting caught. I think I have caught hidden ambushers with cage traps, but I'm not 100% sure they weren't seen first.

Something worth noting, now that I have some cavern experience, is that nasty things can come into the first cavern from open map edges. A forgotten beast cyclops stegosaurus appeared this way and wiped out my fort and about 80 dwarves.

Alternately, you could build a hatch over the stairs and connect it to a lever. The "pull lever" command will probably be executed faster than the "build floor" command, thus reducing the risk of water-related Fun.

AFAIK, the level of a given skill only affects speed when the dwarf is actively performing the associated task. Perhaps the doc was out dealing with his own needs (food, booze sleep, etc).
