How do the Attack and Defense stats work in Pokémon GO?

From looking at the game's data file, it appears that each pokémon has 3 hidden stats: stamina, attack, defense. I've figured out what stamina does from reading this page on a wiki site. Stamina determines a pokémon's HP. However, I still don't understand what attack and defense do.

Pokémon have moves that deal a fixed amount of damage. For example, Bulbasaur and Venusaur can both use the same move, Vine Whip, which deals 10 damage. My current understanding is that they would both deal exactly the same amount of damage. This would mean that Bulbasaur is just as strong as Venusaur when attacking, but that doesn't seem right.

Venusaur has a higher attack stat than Bulbasaur (198 vs. 128). So how does this affect the damage of Vine Whip? Is there an equation that relates the attack stat to damage dealt? I'm wondering the same thing for defense. I know Venusaur has more HP, but does he take less damage as well?

I'm looking for an answer that includes an equation that uses the attack/defense stats.
