The previous answer did not accurately answer the question asked. Creation Club addons do not disable achievements, as they are official Bethesda-endorsed mods that are considered to be more of a DLC, since you have to buy them. If you use actual mods, however, it will disable achievements.
Yes, you can earn achievements while in Journey Mode. I'm not entirely sure if all of them are achievable, however I can confirm that I received a few achievements (Vehicular Manslaughter, Benched) from a Journey Mode world. I don't see any achievements specifically relating to Master Mode either, so I would imagine you can achieve everything in Journey Mode....
No once you have got the achievement item you can't get it again. Steam support aren't going to give you another one. Crafting with Achievement items makes the items untradable aswell so its a pretty bad idea to smelt the weapons down to scrap.
I found that aiming lower or dead centre of the platform didn't work for me. Instead I had to aim at the guy without the flume on the right. This was the only way I could get the correct 1.5 degree call. Oddly in my game it seem that the horizontal angle mattered more then the vertical.

Yes it is. I never cheated and got most achievements. It is key to start clicking a lot! And focus on the upgrades that increase clicking power. Don't just blindly buy any upgrades but plan your upgrade path so you don't waste cookies on upgrades that won't increase your income significantly.

There have been instances of Steam Support returning gibuses to people who accidentally deleted them. But I would bet that Steam Support has seen people try to game the system this way, so you're better off not wasting your time (or losing your hats!)
