You can't beat Elena's score as the epilogue gives you an extra life (and points). So playing the epilogue will give you an advantage over Elena's version.
Clearing it gives you an achievement.

Having completed the game, I can confirm that the option to initiate a conversation with a character does not affect the story of the game.
These options just give an extra insight into the back story of the characters and are interesting to listen to if you want to find out more about the characters and their story.

Dying only affects the stars in a time consuming way. The only thing you have worry about, is that you pass each level before the time for each star runs out.
With AI, I think you have a chance of getting 1 star with moderate difficulty, tops.
Light mode won't give you the symbol. Only moderate and upwards.
To get 2 or 3 stars, you have to complete the levels in a certain time. Each level has its own and you'll see them in the menu.
Getting 3 stars requires teamwork from real players. The AI is useless in getting anything. Get some excellent players and complete the levels with them.

Yes, you should be able to access the saves as long as it is the same region. You will need to delete the game first and then re-download the digital copy.

Based on the list here, it looks like you have all of the unlockable bonuses.
However, you are able to use UP for multiplayer unlocks. If you have only done single-player, that would explain why you have what seems to be "extra" points.
Even when you are in cover you are partly exposed to other players. For example, if you're behind low cover and the opponent is a little higher than you, or if you are behind a corner but the opponent is a little bit off to the side.

You earn a trophy at the end of the game, if you interact with all of the character's dialogues, which is a sense of achievement. Otherwise, it doesn't change the main story at all. However, some of the dialogues are very important in understanding the detailed background to the situation.
