One of the important things that video doesn't mention is who Diana is. She was your handler at the agency, she has been around since the first game, and is probably the closest thing 47 has to a friend. Which makes what happens at the beginning of Absolution quite significant.

Also make sure there are cell blocks assigned to use that canteen (red lines in the logistics screen). If no prisoners are assigned to a canteen the kitchen will not cook food for it even if the kitchen and canteen are linked properly.

As of alpha 29 parole has been added, prisoners are now eligible for parole at 50% and 75% through their sentence. Alpha 30 tweaked the way the parole system works a little.

The devs have stated that tunnels always start from toilets. (As the game is still in alpha this could change in the future, but as of now it is still true).

@Fulli I don't know about optimal (as Rory mentioned bigger is probably better), but currently the maximum class size of Foundation Education is 20 and it is 10 for General Education. Info about class size for each program can be found in the hover-text on the names of programs in the Programs menu.

I can confirm this does work, I just did it recently with my new computer :)

I got through it undetected in a similar way but there doesn't seem to be a way to do it without raising suspicion.

Have you tried going back to the last checkpoint save? They are kept separate from the manual saves and will probably go back further unless it auto-saved after you broke into the safe.
